Well, I’m here to tell you that’s absolutely not the case!

Indian desserts are a big part of Indian cuisine and being vegan doesn’t mean you have to miss out on them.

So, for all my vegan friends out there, I’ve got a treat for you! Here’s your new favorite gajar halwa recipe, but with a vegan twist. That means it’s dairy-free and egg-free.

But before we get into the recipe, let’s take a quick look at what we’re going to be cooking up.

The vegan Gajar Halwa Barfi is a sweet, melt-in-your-mouth carrot pudding made with shredded carrots cooked with non-dairy milk and cardamom. Gajar Halwa tastes like a delicious carrot cake crumble with cardamom.

The word barfi means a square-shaped dessert.

This vegan dessert recipe is also gluten-free and absolutely delicious. It’s soft and creamy and almost fudgy. I love it!

I have tested this recipe with almond milk and it works very well.


I used powdered sugar in this recipe. You can also use granulated sugar, but it takes much longer to melt.

Cardamom powder

Gives the halwa a pleasant fragrance and flavor.

Cashews, Walnuts, pistachios, Almonds, and Raisins – My favorite halwa is one with a lot of nuts and raisins. In this recipe, I have added almonds to the pudding and garnished with pistachio and edible silver leaf.

How To Make Vegan Gajar Halwa

1. Take a heavy bottom pan and mix together the carrots and the almond milk.

2. Cover the pan and cook the carrots on low heat for 15-20 minutes so that the carrots get a chance to cook in the milk.

3. Keep stirring in intervals while it’s being cooked.

4. After 10-15 minutes, add sugar and mix it thoroughly.

5. Stir and continue to cook on low heat for another 5 mins.

6. Finally, add 1 tablespoon slivered almonds, or any other nuts of your choice.

7. Switch off the heat, add the cardamom powder, stir once, and store in a square or rectangular baking dish. Garnish with nuts and something fun like an edible silver leaf (found online) and then cool in the fridge to firm it up enough to cut into squares.

8. Alternatively, you can also scoop the gajar halwa into serving bowls.

Pro Tips For Preparing Vegan Gajar Halwa

1. Make ahead and serve cold, warmed, or at room temperature. Do not put it in the microwave if you have used silver leaf as a garnish.

2. Add a pat or two of unsalted vegan butter when you are cooking the halwa for an amazing taste.

Indulge in this Negan Gajar Halwa Barfi, where the timeless flavors of carrot halwa are shaped into square barfi, creating an irresistible dessert.


  • 4 cups shredded carrots
  • 2 cup almond milk
  • ¾ th cup powdered sugar
  • 1 teaspoon cardamom powder
  • 3 tablespoons crushed pistachio
  • 3 tablespoons slivered almonds
  • 1 silver leaf (vark)



    1. Take a pan and mix together the carrots and almond milk.
    2. Cover the pan and cook on low heat for 15-20 mins until the almond milk gets incorporated. Remember to stir occasionally while it’s cooking.
    3. Add the sugar and mix well.
    4. Stir on low heat for another 5 minutes.
    5. Add 3 tablespoons of slivered almonds and mix well. Then add the cardamom powder.
    6. Turn off the heat and give it one final stir.
    7. Take a rectangular baking tray and grease it with vegan butter or any neutral oil.
    8. Pour the halwa into the baking tray and spread it evenly.
    9. Garnish with the 3 tablespoons of crushed pistachios. You can also apply silver leaf on top if you like.
    10. Refrigerate for 30 minutes.
    11. Finally, cut the halwa into squares and enjoy!


Barfi refers to the square shape of the desert.

If you use silver leaf do not microwave the gajar halwa barfi.
