What is it called Rose Barfi?
Barfi is a type of traditional confectionery that originated in India and is usually square in shape. As for the “rose barfi” variation, it gets its name from the addition of rose syrup which gives it a distinct floral aroma and flavor.
This dessert is usually offered during special occasions, say birthdays, anniversaries or graduation, or marriage.
Ingredients At A Glance

Cashew – Use unsalted and good quality cashews for the best taste.
Sugar – Thick sugar syrup (see how to prepare below)
Milk Powder – Use high-quality whole milk powder for the best results.
Ghee – Ghee has a nutty and rich taste that makes and sweet even more delicious.
Cardamom powder – Cardamom powder provides a delicate aroma and is often used in Indian desserts.
Red Food Color (Red) – A few drops for that delightful rosy color.
Rose Syrup – Adds the sweet aroma of rose.
Chopped pistachios & dried rose petals – Make the prettiest garnish.
How To Prepare Rose Barfi
- Grind cashews into a fine powder, and chop a few cashews.
- In a big pan, add water and sugar and stir carefully until the sugar is dissolved. Boil for 5 minutes until a thick syrup is formed, or until it reaches one-string consistency.
- Add ground cashew, milk powder, cardamom powder, rose syrup, and ghee to the sugar syrup. Thoroughly mix all ingredients.
- Add the chopped cashew and food color (if desired) and keep stirring until the mixture thickens.
- Line a tray with butter or parchment paper and grease it with ghee. Pour the mixture into the tray and spread it evenly. Garnish with chopped pistachios and dried rose petals.
- Cut the mixture into small squares or diamond shapes. Place in the refrigerator and cool for 60 minutes.
- Your delicious rose barfi is now ready to be served!

Pro Tips For Preparing Rose Barfi
- Use Rooh Afza rose syrup available in Indian grocery stores or online. Depending on the flavor’s intensity, you can replace the rose syrup with drops of rose essence. If you use rose essence, you can increase the sugar in the recipe by 1 or 2 tablespoons.
- Make sure that the entire burfi-making process is done on LOW.
- If your burfi does not set, it is because the mixture was undercooked. Return the mixture to the heat, cook for a few minutes until it leaves the edge of the pan, and then set it aside.
- Cooking for a more extended period of time or using an overcooked mixture results in chewy barfi, which you want to avoid. The secret is to remove the mixture at the proper time which is when it leaves the edge of the pan.

- 2 tbsp milk powder

- 4 or 5 drops red gel food color
- 1 teaspoon rose syrup (Rooh Afza brand)
- 4 tablespoons chopped pistachio
- 10–12 dried rose petals

Notes
You can keep this in the fridge for 3-4 days and it freezes well too.
Adjust the rose syrup and sugar to your taste as the rose syrup is also sweetened.
