This is a simple salad recipe with just pomegranate, cucumber and peanuts. ANd some tangy lime and seasoning.


Ingredients

  • 1 cup cucumber, chopped into small cubes
  • 1 cup pomegranate
  • 1/2 cup roasted peanut
  • 1/3 cup coriander leaves, finely chopped (optional)
  • 12 green chilies – finely chopped (optional)
  • 1 teaspoon salt
  • 1 teaspoon fresh lime juice

Instructions

  1. Chop the cucumbers and separate the seeds of the pomegranate.
  2. Add them into a mixing bowl along with the peanuts. Add salt as per taste.
  3. Squeeze the lime add the green chilies, and garnish with coriander leaves, if using.
  4. Give a nice mix and enjoy.

Notes

Both coriander leaves (cilantro) and green chilies are optional. I love them both so I always include them.
