Ingredients At A Glance

Mangoes – Buy whatever mangoes are available locally. Peel and dice the mangoes into cubes and freeze them before making the popsicles. Frozen mangoes work the best.

Maple syrup/Honey/Agave – Look for pure maple syrup rather than maple-flavored syrup. You could also use honey (though please keep in mind that these popsicles will no longer be vegan if that is a must), or agave syrup if you prefer.

Coconut Milk – You can use full-fat coconut milk for thick and creamy ‘ice cream.’

How Do I Prepare Mango Coconut Milk Popsicles?

Prep the Mangoes: Grab those ripe mangoes and dice them up into cute little cubes. Toss them in the freezer and let them chill out for about 2-3 hours till frozen.

Blend Away: Once those mango cubes are nicely frozen, whip out your blending jar and toss them in. Now’s the time to add in your sweetener of choice, or you can choose to let the mango’s natural sweetness shine – totally your call!

Stir in the Coconut Milk: Give the coconut milk a good stir until it’s nice and thick, making sure that the delicious coconut cream that collects at the top gets all buddy-buddy with the coconut water.

Popsicle Time!: We’re at the most fun part – crafting our popsicles! Start by pouring your divine mango puree into the popsicle molds until they’re about halfway full. Follow up with the coconut milk, then swirl it gently with the stick part of the mold to create a whimsical marble effect. If you’re feeling playful, you could even alternate layers of mango and coconut milk for a different look. Basically, you’ve got the creative control here!

Patience is a Virtue: All that’s left to do now is let your masterpiece freeze overnight. In the morning, you’ll wake up to the most decadent, scrumptious Mango Coconut Milk Popsicles.

Pro Tips For Making Mango Coconut Milk Popsicles

For an extra creamy and tropical twist, try adding a splash of full-fat canned coconut cream to your popsicles. It will give them a more decadent, ice cream-like texture and enrich the flavor. Also, remember to choose ripe mangoes for the base, as they are sweeter and will give a vibrant color to your popsicles.

Umnoulding Tip: Unmolding your popsicles can sometimes be a bit tricky, but not to worry! Just run the outside of your molds under warm water for about 20-30 seconds. This will loosen the popsicles just enough to slide them out smoothly. Be careful not to use hot water or leave them under the warm water for too long, as it might cause your gorgeous popsicles to melt!

Enjoy the fruits of your labor, friends, and remember to keep it cool this summer with amazing homemade treats like these!
