Description
Kerala style Chicken Stew is a rich and creamy chicken stew. In this recipe the tender chicken is simmered in a fragrant blend of spices and coconut milk.

- 2 pounds boned-in or boneless chicken pieces
- 1 onion – big, thinly sliced
- 2 potatoes – medium, cubed
- 3 carrots – cut in round pieces
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
- 2 green Chilies – slit lengthwise (you can remove seeds if you don’t like it spicy)
- 1/2 teaspoon whole black peppercorns
- 5 black cloves
- 2-inch cinnamon stick
- 2 bay leaves, fresh or dried (optional)
- 2 pieces of star anise
- 2 cans of coconut milk
- 1 teaspoon black pepper powder (Optional)
- 3 tablespoons coconut Oil
- 1 teaspoon salt
- 1 cup water
Instructions
- In a wok or a deep, wide pan, heat coconut oil. add bay leaves, star anise, cloves, peppercorns, and green chilies.
- Sauté for a minute.
- Add the sliced onions, salt, minced ginger, and garlic, and sauté till the onion turns soft.
- Add chicken pieces, mix well, and then add carrots and potatoes and combine everything well.
- Add freshly ground pepper, and mix everything again.
- Add water cover and cook for 7 to 8 minutes.
- Now add coconut milk cover and cook again till the chicken is fully cooked.
- Delicious chicken stew is ready to serve.
- Garnish with fresh coriander leaves.
- Serve hot chicken stew with dosa, rice or bread and enjoy!
